Wisconsin Spinach Salad

It may surprise you to learn that Wisconsin is the leading producer of cranberries, producing 62 percent of the U.S crop. Our cabin in northern Wisconsin is directly across the street for a cranberry bog so we use cranberries in everything we can!


  • 1 bag of baby spinach

  • 1/4 red onion, sliced into half circles

  • 4 oz Mandarin oranges, drained and cut in half

  • 1/3 c. craisins ( dried cranberries)

  • 4 oz feta cheese crumbles, reduced fat

  • 1/3 c. Red Wine Vinaigrette for dressing


  1. Toss everything! If making ahead, wait until serving to add the dressing. It will be tempting to add more dressing to the salad, but don't! If there is anything leftover, just add more spinach the next day.
