I love vegetables and this can utilize left over veggies and meat dishes needing a new design.
1 Onion, diced and saute in
1 tbsp Avocado Oil
1 tbsp butter
4 carrots, sliced at a diagonal, saute with onions
4 stalks of celery, sliced and added to the carrots and onions
1-3 diced garlic cloves sliced broccoli
1 cup cabbage or bok choy
1 cup Once the vegetables are soft, add a
1 carton of Cream of Mushroom Soup
1 cup or two of leftover chicken or roast, cubed or shredded.
Saute vegetables in a little oil or butter until soft,
Add the soup and a little water or broth if needed
Add meat of your choice if desired. Tofu could work also.
Serve over rice, toast, quinoa
Add crispy chow mein noodles and soy sauce, and hot sauce to taste
