Space Tacos

Having recently returned from my 2-week Sensoria Mars Mission at the HI-SEAS habitat I had space food on my mind and wanted to share with you one of my favorite quick and easy meals: Space Tacos. It reminds me of when I was a kid because I loved eating tacos - and still do. It's a delicious meal that's always a crowd favorite!
Ingredients (Servings for 2)
2 cups freeze-dried ground beef
1 tbs freeze-dried onions
1/4 cup freeze-dried green peppers
1 taco seasoning package
2 cups of water
Directions
Add all ingredients into a single pan and bring to a boil. Reduce heat and simmer for 5 minutes or until excess liquid is reduced.

Garnish and Serve
Taco shells or tortillas
I like the crunch of a good corn taco shell for my space tacos and I like to have some diced jalapenos, chopped cilantro, sliced tomatoes, shredded cheese and guacamole dip as my toppings. I choose local, fresh ingredients from my backyard garden or farmers market when enhancing the meal.
