Fresh Strawberry Pie

I like low sugar recipes so I was excited to figure this out! You'll want to eat the entire pie!

Ingredients:

  • Pie crust of your choice in a 9" pie dish, cooked and cooled

  • 3 oz of softened cream cheese spread on the bottom of the pie shell

  • 1 cup of smashed strawberries so it becomes like juice (blender is preferred)

  • 1 tbsp Corn Starch to the strawberry juice and bring to a low boil to thicken, then set aside to cool. In a large bowl, add fresh stawberries, cut in slices, then stir in the thickend juice.

  • Add whipped cream Enjoy!

Directions:

  1. Cook pie crust, then cool.

  2. Cook strawberry juice with corn starch and bring to a low boil to thicken, then set aside to cool.

  3. In a large bowl, add fresh strawberries, cut in slices, then stir in the thickened juice. , then cool

  4. Add sliced strawberries with thickened juice to the pie shell

  5. Serve with whipped cream.
